Tati’s Favorite Breakfast Omelet

Ingredients:

4 large eggs
½ cup of feta cheese
1 cup of spinach
Mushroom
Salt and pepper to taste

Directions:

Beat the eggs and add the salt and pepper. Heat the oil in a 12” pan on medium-high heat. Add all of the eggs in the pan and distribute evenly in the pan. Add the mushrooms first on one side of the pan, add the spinach on the other side. Let cook until the eggs begin to set. Crumble the feta on the same side as the mushrooms and fold over. Cover for about a minute – just so the cheese can melt in the omelet. Take out of the pan, cut in half and enjoy!
