Tomato, Garlic Parmesan Eggs

Tomato, Garlic Parmesan Eggs

2 large tomatoes, chopped
2 tablespoons of garlic
4 large eggs – beaten
Grated parmesan cheese – use as much or as little as you like but save some for sprinkling on the eggs when you serve them.
Olive oil or butter – which ever you prefer to cook your eggs in
Salt and pepper to taste

Sautee the garlic for about two minutes (in the butter or olive oil) on medium heat. Add the tomatoes and cook down until most of the water from the tomatoes is cooked off. Add the amount of desired parmesan and cook for a couple of minutes, lower the heat and add the eggs. Stir constantly until the eggs are cooked thoroughly to make sure you mix the completely with the tomato/garlic/parmesan. Top with extra grated parmesan!

I came up with this recipe last Christmas season. I was on breakfast duty and took these ingredients out of the fridge and got creative! It was a hit by the way *wink
This is a recipe for two so double or triple up if needed!
